Baby Back Ribs FireCooker Style

Ingredients

½ cup of your favorite barbecue rub
1/4 cup raw sugar
3 full slabs of baby back ribs about 2 pounds each, back membrane removed
¾ your favorite BBQ sauce
3/4 cup Jalapeno Pepper Jelly
¾ cup apple juice
Your favorite BBQ sauce as needed


Preparation Instructions

Mix the rub and the raw sugar together and sprinkle it on the ribs. Use about 2/3 on the meaty side and 1/3 on the boney side.

In a small saucepan combine the BBQ sauce with the Jalapeno Jelly over low heat stirring until just combined. Set aside. Prepare the grill indirect at 300° using a combination of cherry and hickory for flavor.

Cook the ribs until they are nicely caramelized and looking great. This should take about 2 hours.

Remove the ribs to a platter or sheet pan. Lay out three double thick layers of heavy duty aluminum foil each big enough to wrap a whole slab. Transfer the ribs to the foil meaty side up. Top each slab with 1/2 cup of the sauce/preserve mixture spreading it evenly across the slab. As you fold up the foil into a packet pour ¼ cup of the juice in under each slab of ribs.

Seal the packets snugly being careful not to puncture the foil with the rib bones. Return to the cooker for an hour or until they reach your desired degree of tenderness.

Check for tenderness by squeezing the meat between the bones with your fingers. It should be very soft. When the ribs are done transfer them to a direct medium hot grill. Cook and flip for a just a few minutes brushing with BBQ sauce if desired. Cut each slab into three pieces and serve.
