Olive Steak Sandwich

Ingredients

1/2 cup plus 2 tablespoons olive oil, plus some for brushing
1 tablespoon finely grated lemon zest
2 teaspoons of finely chopped rosemary
1/2 teaspoon of crushed red pepper
Sea salt and freshly ground black pepper
1 3/4 pounds New York strip steak, cut 1 inch thick
1 cup pitted green olives (6ounces), finely chopped
3 tablespoons finely chopped flat-leaf parsely
2 teaspoons of chopped oregano
1 tablespoon chopped mint
2 teaspoons of chopped capers
1 tablespoon fresh lemon juice
4 crusty rolls, split
2 medium tomatoes, thinly sliced


Preparation Instructions

Preheat grill, in a small bowl combine 2 tablespoons of olive oil with the lemon zest, rosemary, crushed red pepper, 1 tablespoon of sea salt and 1/2 teaspoon of pepper.  Rub the mix all over the steaks and let set for 10 min.  Next, in a bowl mix the olives, parsley, oregano, mint, capers, lemon juice, 1/2 teaspoon of pepper and 1/2 cup olive oil.  Then, grill steaks to medium-rare (or preffered taste) and thinly slice.  Brush rolls with olive oil and toast on grill for 1 min.  Place steak on roll with olive relish and sliced tomato….serve.


Cooks Notes

Best to use New York strip on this recipe.  Relish can be made with less olive oil if desired.
